New Delights From Southern France
Domaine de Majas
The story of Domaine de Majas is intrinsically tied to Tom Lubbe, winemaker at nearby Matassa. In 2007, under Tom’s guidance, Domaine de Majas’ Alain Carrère moved away from the world of chemical agriculture and unnecessary manipulation of his fruit towards a more thoughtful approach. This sea change has produced a range of undeniably simple yet sustaining wines that are true reflections of Alain’s wild corner of the Pyrenean foothills.

Il Fait Soif 2019
70% Grenache & 30% Syrah
The grapes used to make the Maxime-François Laurent Il Fait Soif wine come from ecologically-cultivated vines aged between 15 to 30 years old grown in predominantly clay-calcareous soils. The clusters are selected in the vineyard and the harvest is carried out manually. The grapes macerate for 15 days in concrete tanks, some of them with the stalks. Alcoholic fermentation takes place with native yeasts, and minimal sulphites are added after malolactic fermentation depending on the vintages. The wine ages for six months and is bottled after Easter without clarifying or filtering.
