Frank Cornelissen

We therefore choose to concentrate on observing and learning the movements of Mother Earth in her various energetic and cosmic passages and prefer to follow her indications as to what to do, instead of deciding and imposing ourselves.”

Frank Cornelissen

Frank Cornelissen is the owner of 19 hectares of vines rather high up on Mount Etna. Uniquely, he has been involved in wine his entire life. As the son of a wine broker in Belgium, he had the opportunity to be immersed in wine on a professional level from a very young age. Frank went on to produce his first wine in 2001 when he started with only 0.40 hectares of vines.

Frank is obsessive over details in an effort to make wines that truly express terroir with perspective. He is a meticulous vineyard worker and keeps an extremely clean and organized cellar. The evolution in his wines are intriguing as well. Earlier vintages were linear, angular, precise, and full of minerality. He has often said that in the early days his goal was to create liquid stone. His wines have softened with time now striking balance between fruit and dynamic minerality.


While there are are many important details in his winemaking method, the key is in the vineyards. Frank is not Sicilian, so choosing Mount Etna was deliberate. The main reason to choose the North Valley of Etna was for its it’s incredible and unique diversity of volcanic soils that have an immutable voice. This in tandem with Etna’s primary varietal Nerello Mascalese, he believed he could make wines of great complexity and distiction. He has describes Nerello Mascalese to be somewhere between Pinot Noir and Nebbiolo. Frank’s best wines have the dry and sharp tannins you find in great nebbiolo, but with the lusher fruits of Pinot Noir.

Frank works without the use of herbicides, pesticides, nor any other chemicals. He occasionally uses biodynamic treatments, but not in the ways outlined by biodynamic calendars as he feels his vineyards have their own unique schedule!

Wednesday March 19th we will be showing off some of Frank’s reds, including FM and MC. Starting from 17, this will be a busy one, so show up early!

Colleoni and Fabio Gea: a tasting of visionary winemakers.

Two producers who embody a deep respect for tradition while embracing an artisanal, hands-on approach to winemaking.

Colleoni: based in Montalcino, is known for crafting pure, elegant, and terroir-driven Sangiovese. His Brunello and Rosso di Montalcino reflect the essence of the region: refined, structured, and expressive of vintage and soil.

Fabio Gea: a maverick from Barbaresco, works on a micro-scale, using unconventional methods and experimental vessels such as porcelain and stoneware to highlight the raw, unfiltered beauty of Nebbiolo. His wines are alive, unpredictable, and deeply personal.

We explore their unique interpretations of these noble grapes, Sangiovese and Nebbiolo through wines that defy conventions and speak authentically of place and philosophy. Wednesday March 12th, starting from 17.

A love story in Beaune - Domaine Dandelion

Meet Morgane Seuillot, a native Burgundian. Meet Christian Knott, an Aussie from Bondi, Sydney, living in Burgundy since 2009. Morgane’s mom introduced her to Christian at his espresso cart at the Saturday market in Beaune.

They farm a couple of hectares of old-vine Aligote, Pinot Noir and Gamay on various small parcels around the village of Meloisey - just over the hill from St Romain. Christian also has a day job at Chandon de Briailles.

The harvest in Hautes Côtes de Beaune is nearly a month later than the rest of Burgundy. There is no mechanisation in the vineyards, only horses used or, when the vineyards are too steep, worked by hand. They choose to spray raw milk on the vines instead of sulphur and no pumping or filtration is used. Grapes are pressed in an old, wood-beam, vertical screw press, and aged in neutral oak under their house.

They produce a tiny handful wines - but what wines they are. Pure, bright and full of personality and the growers' vision. A real find considering how difficult it can be for small scale vignerons to exist in this part of France with the price of land being so high.

The paper used for their labels  comes from an old-fashioned paper mill of Fontaine de Vaucluse from the Moulin Vallis Clausa. It is composed of cotton, linen, hemp and inserted bluet flowers. Morgane cuts out her labels, stamps the drawing of a bird drawn by her and then manually graphs the name. All bottle labels are applied by hand.

Curious enough? Wednesday 5th Oliver will be running the Tasting and showing off some of these Beaune beauties. From 17 to 18, 150kr per person, limited seats, so don’t be late!

Grapes, Love and Time · Franz Strohmeier

“I have such high respect for developments happening unseen – both in the vineyard and later in the wine itself, that I'm afraid of disturbing and defacing the natural process through interference.”

They say it takes a special place to make a special wine – for Strohmeier's ethereal wines, the secret ingredients must include an abundance of sun and about 1,000mm of annual rainfall – where the South-Eastern foothills of the Alps meet the base of the Koralpe, the Adriatic influence also meets the cold mountain air.

In a craft where precision and technical know-how tend to become bragging rights, Franz is not afraid of the unknown. If disease strikes a vine, he will often forgo treatment, opting to remove the vine and planting a tree in its place. What exactly the tree does to the wine is anybody's guess, but Franz believes that the vineyard as a whole is one living organism, and the thriving biodiversity in his vineyards is the best health approval from Mother Nature.

Like a few seconds of silence in a piece of music or a large shadow in a photograph, it often takes a tremendous amount of knowledge and courage for a maker to completely let go and do nothing. “I have such high respect for developments happening unseen – both in the vineyard and later in the wine itself, that I'm afraid of disturbing and defacing the natural process through interference.” The lack of actions is not due to Franz’s indolence, but rather a reflection of his confidence and trust in nature. Franz's mastery is in his utter contentment, not only in his land and grapes, but also in the love and time that he puts into the bottles.

Meet the Winemaker · Markus Altenburger

“Our approach to viticulture is a very unmodern one and the concept is ‘doing nothing if possible’. We let grass and herbs grow between the rows to save the soil from drying out and to build up humus and do as little as possible to avoid stress to plants and soil.

Our fields look different to neatly trimmed and properly cut vineyards you might know from fancy advertisments. Bees, butterflies and all kind of beneficial species have started to return give us an idea of natural beauty.”

In 2006, Markus took over the family winery in Jois, and to this day solely focuses on the varieties that best express this unique terroir. His approach in the vineyards and cellar has shown a 180-degree change over the last 15 years, and today all of his vineyards are certified organic, now gearing towards biodynamic certification in the coming year. Blaufränkisch, undoubtedly Austria's highest quality red terroir grape stands at the centre of Markus Altenburger's work.

Together with his wife Bernadette and his cellar master Kathrin, Markus tends 13 hectares of vines scattered mainly on two of the Leithaberg appellation's premier single-vineyards, Gritschenberg and Jungenberg. Gritschenberg, in its geological core formed by the outskirts of the Alpine mountain range, shows a high density of limestone, whereas Jungenberg, a mere few hundred metres apart, contains a pure schist composition, giving the wines a more vertical and direct expression of fruit. Beyond Blaufränkisch, old-vine Chardonnay (grown on limestone), Neuburger (on schist and limestone) as well as Grüner Veltliner (on limestone) represent other incrementally important varieties, which Markus vinifies and releases as single vineyard wines with little to no intervention.

Salt, stone and vines · Vinas Mora

Natural wines from historic sunbathed stone vineyards of Babić and other local varieties in Primošten, Southern Croatia.

Story time: Kreso, a former somm, found himself in his coastal house in Primošten at the beginning of the COVID-19 pandemic. Passionate about the area, it’s unique terroir, and the Babić grape variety, Kreso always advocates drinking wines made by the local farmers who have no or very little commercial success. This zeal is how he found Josipa and Neno Marinov, a local couple producing wine from Babić, “as their elders did 100 years ago, with some improvements”. The pair was selling wines in plastic bottles on the side of the road.

Together with Neno, they discovered nearly abandoned winemaking facilities of a local co-op where most of the growers in the area would sell their grapes. The closing of the co-op would have devastating effects on the entire local wine-growing community. The opportunity to take over was too good to pass on, and it was also necessary to keep the tradition alive. Joined by another friend and wine professional, Niko Dukan, the three of them founded Vinas Mora, with Kreso at its helm.

A play on words in Croatian, the winery name means “wines from the sea” because of the vineyard’s proximity to the Adriatic. Most of the growers involved farm vineyards only a few meters above sea level, where Babić vines literally grow in the rocks. However, the previously rocky, hardly accessible terrain saw incredible transformation through extreme human effort into agricultural land by manual clearing. Dry-stone walls separate the tiny plots with only three to four plants each, making it extremely hard to farm and harvest here, not to mention impossible to use any machinery. In this unique terroir, wines of great minerality are created, only seemingly slender and subtle, but capable of revealing an unexpected depth where finesse and elegance coexist.

Meet the Winemaker · Clan Del Vino

Bodega Clan del Vino, run by Irene and Fernando, is a small producer in Segovia, north of Madrid in the grand Castilla y Léon region.

Their focus is to work as natural and pure as possible with old and typical grape varieties such as Verdejo, Tempranillo and the very rare Pirulès. Starting in 2017 by taking over from Irene’s uncle, they didn’t start from scratch but with vines from the age of 40 years to 150+ years pre-phyloxera vines.

We will have the pleasure of hosting Irene for a special Wednesday Tasting, where she will introduce:

Going back to 2021 with Jean-Yves Péron

Jean-Yves Péron, another usual suspect in our cellar, born and raised in the Savoie, studied winemaking in Bordeaux in the late 90’s. After school he spent some time working for Thiery Allemand in Cornas and later with Bruno Schueller in Alsace, both of whom he considers his mentors.

In 2004 he returned to the Savoie and began making his own wine in the village of Chevaline on schist-covered sloping vineyards running anywhere between 350 and 550 meters. In some ways working vineyards at these altitudes in the Alps, on slopes this steep is more like mountain climbing than winemaking, but Jean-Yves believes that the opportunity to work with vines over 100 years old on this ancient terroir is more than worth it.

This Wednesday Tasting will be focused on his 2021 cuvées that we’re bringing up from the cellar. Come early because this one will be a doozy!

We'll start in Alto Piemonte in the tiny area called Boca and the producer Le Piane’s 100% Erbaluce called Bianko, vintage is 2020. Next area is almost straight south from Boca in the area Dolceacqua in Liguria, located 8-10 km from the sea. Here we’ll taste the wine Antea Bianco 2019 with a short skin maceration on the very rare variety Rossese Bianco from extremely old vines planted between 1817-1839. Then moving north east to Tagliolo Monferrato in Ovada where the couple, Maria Luisa & Emilio, runs Cascina Borgatta alone (they’re in their mid 80’s). We’re gonna taste their Barbera 2016 “La Borgatta”. Last stop is in La Morra, Barolo and the Veglio Brothers Barolo 2018 from the vineyard Castagni. Very classic and elegant in style" - Terkel

Situated in the heart of Montalcino, Le Ragnaie is the highest elevation vineyard in Montalcino. We thought we could start with a rosé !

PODERE SANTA MARIA ‘COLLEONI’ Toscana Rosso 2019

Montalcino masters, about 500m above sea level, on volcanic soil in Monte Amiata. This is a Sangiovese is the freshest of all, with a good dose of tannins.

IL FABBRI, Chianti Classico 2018

Classic Chianti, situated in LAMOLE. Aged on concrete tank for a 12 months by Susanna Grassi. A great wine to understand a typical Sangiovese with a twist of spicy notes. 

CASTELL’IN VILLA, Chianti Classico 2015

New Zealander by birth, South African by nuture, French by nature

Tom Lubbe is a dear friend, making iconic beautiful white, red and orange wines and has carved an indelible niche for himself in the Côtes Catalanes. 

Blossom 2019

100% Muscat Petite Grain

The vineyard has cherry trees planted around it hence the grapes grow near the blossoms. Spontaneous fermentation with native yeasts, no filtering or fining and bottled without sulfites added. This is a rarity among Matassa's cuvées. Limited availability.

El Carner Rouge 2019

60% Grenache Gris & 40% Macabeu 

From a tiny (0.5-hectare!) parcel of vines surrounded by wild garrigue (scrubland). Sappy, lush and at just 10.5% this is far less fearsome than its name - ‘The Ram’ in English.

Mambo Sun 2019

70 % Grenache (Noir, Gris, Blanc) 30% Maccabeu

Whole cluster fermentation in closed tanks to avoid extraction (no need for punch down), pressed after 5 days of maceration and aged in concrete tanks before bottling after 6 months.

Ace Of Spades 2019

60% Carignan & 40% Mouvedre

Grown on black marl soil with volcanic bedrock (Myrs Vineyard). Vines planted from 1950-1985.

Fact: The three small trees in the Matassa logo represent the three partners of the winery - Tom, his wife Nathalie and Sam Harrop.

Foot-crushed heavenly wines from Illmitz in Austria’s Burgenland

Christian Tschida ferments all of his wines in closed top tanks that sit outside in the shade in which the grapes are foot stomped. After this the juice is moved inside to barrel for aging. As of the 2015 vintage all of Christian’s wines are made without any additions of sulfur. The wines are never racked and everything is bottled by hand to preserve the freshness of the wine and leave a little residual carbon dioxide to aid preservation.

The Himmel Auf Erden wines: The grapes are hand harvested and destemmed. The juice ferments in large barrels with indigenous yeast. It spends 1 year aging in 500 to 1500 litre barrels and is bottled without fining or filtering. They all show fresh and racy characteristics with buoyant fruit making them very pleasing to sip quite quickly.
